Lentil Soup Recipe "Lentils Coriander" as requested

Ok many have asked about my lentil soup recipe so I decided to go ahead and type it up and put it on here. It is my Moms recipe and iti s soooo good. There is polish kielbasa in it and you can taylor that to your likeing. I know when I was just starting soup I would still make it this way and leave it in for hubby (he is 6 months post-op) and I would just eat around it. I hope you all enjoy. We are dining on this tongiht YAY!!! It is one of my hubbys favs and mine too. If anyone makes it please let me know what you think. Or if you amek any tweaks. Oh I just remembered that on occasion she has added very finely diced carrots and or the frozen chopped spinach to this as well. There really is a lot you can do with it. Thanks Mom! Mom'sLentils Coriander 1 lb. kielbasa, cut into 1 inch pieces *(I cut small bite size for hubby and myself) 2 large onions, thinly sliced *(I do this on a mandolin for extra thin slices) 2 Tbs. ground coriander 1 tsp. fresh cilantro *(you can use dry as well just use less) 1/2 tsp. ground ginger 1 1/2 tsp. salt *(Mom does low sodium now so she never adds anymore and says she does not notice a difference with the salt of the kielbasa this so it is up to you) 2 cups dry lentils 7 cups water 1 Tbs. lemon juice Sour Cream Lemon slices _________________________ Brown kielbasa in pot, stir in onions and cook till onions are tender but not brown. Drain off excess fat. Stir in coriander, ginger, cilantro and salt. Add the lentils and water. Bring to boiling. Reduce heat and simmer for @ 50 min adding more water if needed. Stir in lemon juice. Serve in soup mugs and serve with a dollop of sour cream and a lemon slice. Enjoy!

Ok I am going to give this a whirl. I have to say that lentils are not my favorite but this sounds so good they are worth a try again. Wonder if it would work with a different kind of bean? Thanks for the recipe! *hugs* Felicia
