I have a different pancake - almost like a crepe:
2 eggs
a splash of skim milk
1 - 2 T of flour (the less flour you use, the fewer carbs, and the thinner your crepes will be.
Letting the batter rest while you make the apple filling makes a slightly better crepe.
Heat a skillet and spray with Pam.
Pour in a small-moderate amount of batter and roll the pan around to spread the batter out into a nice circle the size of the bottom of the pan. If you chose to add more flour, you may have to spread it with a spoon. Coo****il the edges lift a bit, flip and coo****il done. You can cook them all and pile them up in a big stack or serve them out one at a time.
Meanwhile, peel and chop an apple and cook it down with a little water or a bit of butter if you like. You can add a bit of splenda if you like, but I dont. Once it is a nice soft consistency, take of the heat and shake on a little cinnamon. Wrap some apple mixture into each crepe like a burrito. Yum! Once you get the hang of it, it is quicker than it sounds. My daughter loves them too.

I added up the "total pounds lost" from all the folks *****sponded to my "How have we done" post last week. Collectively, we've lost 1572.5 pounds!!!

Alright, Cheer Mom Vickie, that means you've lost 48% of your body weight, plus over 100% of your excess body weight - amazing.
