High protein Lunch
Hi everybody! I know I have'nt been around for a while, but I do check in from time to time to see how everone is doing. Looks like everyone is doing great!
I thought I'd post a low calorie high protein lunch that a co-worker (another RNYer) and I came up with.
Small can of tuna (water packed)
2 hard boiled eggs
2 TBS of FF mayo
1 Dill pickle
Salt and pepper to taste
Now here's the secret..
Put it in a BLENDER! That's right, a blender! It sounds strange, but after whipping it into a type of pate, it goes down very easy. This makes about 2 lunch servings, and it's very filling. Eaten with 4 saltines, here are the stats.
Pro: 57 grams
Calories: 430
Fat: 14
Carbs: 14
