Holiday recipe
Ok my work has a holiday party every year and we all have to bring something. I was thinking what could I make to guarantee that there would be something there I could eat. Normally they have buffalo wings and meatballs, neither of which I can handle right now. Well I remembered a recipe that my mom used to make that would work for us. Its a crab dip and its really, really good and really easy too. All it is is:
1 pound of imitation crab meat finely chopped
16 oz of cream cheese
Old Bay seasoning to taste
Mix all together and form a ball. Cover the ball with ****tail sauce (optional) and serve with crackers. I am using saltine crackers cause I was told Ritz crackers are a NO-NO.

Delicious Sweet Potato Pie
2 large or 3 small sweet potatoes
1/2 cup of Equal Sugar Lite
1/2 cup of Splenda brown sugar
1/2 stick of butter melted
1 cup Hood Carb Countdown skim or 1 or 2 % milk (whatever you prefer - I like skim)
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon ginger
1 teaspoon vanilla extract
2 eggs
1 frozen deep dish pie crust, thawed
Cook sweet potatoes however you like - I prefer to roast them in the oven at 350 for about 40 minutes (will be longer for larger sweet potatoes****il the skins are loose and they are soft. (Keep the oven hot because the filling does not take long to prepare). If you roast them, let them cool for about 15 minutes or until you can handle them. Peel the potatoes and mix them the Equal, Splenda, butter, eggs, vanilla and all spices with a hand mixer until well incorporated. Add the milk and mix until it is as smooth as you can get it. Pour filling into thawed pie crust. Place the pie on a cookie sheet and bake at 350 for 45 minutes or until a knife inserted comes out smooth. It's absolutely wonderful. You can top it with Cool Whip Free if you like but it's yummy all by itself.
