Penut Chicken with red pepper strips

Make sauce by combining ingredients and stir with fork. Set aside. 3 tbsp reduced fat penut butter 2 tbsp reduced sodium soy sauce 2 tbsp water 2 tsp brown sugar substitute 2 tsp Oriental sesame oil 1 tsp peeled, grated, fresh ginger root 1/2 tsp red pepper flakes Veggies- 2 medium to large sweet red peppers, cored, seeded, and cut into 1/4" wide strips 4 green onions, cut into 1" pieces, including green tops 2 cloves garlic, finely cut or put through press Chicken- 1 lb boneless chicken breasts (2-3), cut into strips about 3 by 1/2 inch 1)heat 1 tbsp oil in wok or nonstick skillet over high heat until hot. Add chicken, stir fry until browned, about 4 minutes. 2)Add garlic, red pepper, and green onion. Reduce heat to medium high an stir fry 3 mins. 3)Add the penut butter mixture and cook 1 minute, stirring to coat the chicken 4)sprinkle with 1 tsp chopped penuts if desired 6 servings per serving: 166 calories, 17 gms protein Can serve over rice if desired.
