Black bean, feta, and rice salad
1 can (15oz) black beans, rinsed and draned
1.5 cups chopped tomatoes
1/2 cup cooked rice
2 packages (3.5 oz each) crumbled Athenos Reduced fat Feta Cheese
1/2 cup each chopped celery and green onions
1 tbsp oil
1-2 tbsp vinegar
1 package splenda
garlic powder to taste
2 tbsp chopped fresh cilantro or parsley, or 1 tbsp dried parsley
Mix all ingredients, refridgerate.
Yields approx. 5 cups
Per 1/2 cup serving 112 calories, 8 gms protein
