What I'm baking for my Aunt's house on Thanksgiving!

I got this from splenda.com... I figured I might be able to indulge in a bit of this on Thanksgiving! (I'll skip the crust when I have my bite!) Speaking of crust, does anyone know of a low fat or sugar free crust that's ready made? "The Great Pumpkin" Pumpkin Pie Makes: one (9-inch) pie / 8 servings Preparation Time: 10 minutes Bake Time: 50 to 60 minutes 1/2 15-ounce) package refrigerated pie crust 1 (15-ounce) can pumpkin 3/4 cup SPLENDA® No Calorie Sweetener, Granular 1/3 cup brown sugar 2 teaspoons ground cinnamon 2 teaspoons ground ginger 1/2 teaspoon salt 1/8 teaspoon ground cloves 3/4 cup half-and-half 3 large eggs, lightly beaten 1 teaspoon vanilla extract * PREHEAT oven to 375°F. * UNFOLD piecrust; press out fold lines. Fit piecrust into a 9-inch pieplate according to package directions; fold edges under and crimp. * STIR together pumpkin and next 7 ingredients until blended. Add eggs and vanilla, stirring until blended. Pour filling into piecrust. * BAKE for 50 to 60 minutes or until set in the center. Cool completely on a wire rack. I was on www.splenda.com this morning. I think i am going to try to make the cheesecake. My family lovesssss cheesecake. I too will not eat the crust but i can take a spoon or two from the top. We dont really care for pumpkin pie so hopefully this will go over good. I am also doing the big cooking, this is a test for me. I am making turkey, stuffing, mashed potatos, corn, Lasagna, bisquits, sweet potatos and who knows what else lol....Should be interesting. I hope you have a very Happy Thanksgiving. I was thinking about going to the parade but it looks like its going to be cold, i live only a few blocks away but i dont like going when its cold. I went last year and it was like 60 degrees it was beautiful.

Oh I love cheesecake too! And it's high in protein. I hope you have a great Thanksgiving! Sounds like you will be busy. I'm sure you'll do great! With all that cooking though, you probably wouldn't have time to go to the parade! I always loved watching it on TV!

PLEASE share the recipe!! I looooove pumpkin cheesecake and I made one every year to take to my relatives so I would rather make that instead. I guess I could probably just take my recipe and substitute the splenda, but let me see your's, I'm curious and it sounds wonderful!! HUGS, Vi
