Is it possible....
That I have stretched my pouch? I am 3 weeks post op and 2 weeks ago I could only eat 1/2 an egg, and tonight I ate 1 piece of fish fillet and 2 tsp pinto beans and felt satisfied. I have NEVER eaten more when I felt satified, so what's the deal?

I am also 3 weeks out and this just happened to me. All of a sudden I am able to drink more than a couple of sips of water without feeling full. I thought...wow, it almost feels normal. I think the idea of the swelling going down is a good one since I have not eaten anything that would cause it to stretch. I have been having trouble tolerating pretty much anything so I haven't been eating much more that some liquids during the day and some yogurt. Today however was much better and I was able to tolerate more.

I think your pouch is supposed to stretch, or at least is expected to stretch. I was told in my pre-surg class that when you come out of surgery, your stomach's capacity is slightly smaller than an egg; a year from now, it'll be about the size of a soup can and *should* stop there.
Also I think that a previous poster may have been on track regarding swelling / inflammation that could be decreasing as you heal more.
Stick to your doctor's eating plan and I"m sure you'll be just fine. It sounds like you are eating very small quantities, how much could you have really stretched it?
