Yummy protein pancakes

Hey guys! I've been trying to spruce things up as far as the eating goes and I tried a new recipe tonight and thought I'd share. Some of you may have made these already, but they are Cottage Cheese Pancakes from Bariatriceating.com. Cottage Cheese Pancakes Melty, cheesy, with bits of onion... really good, and good for you! Double the recipe and serve to the family with a fresh salad bowl. Yum! Makes 4 five-inch pancakes, serves 2 Calories per serving 135, fat 6g, carbs 4g, protein 10g Small onion diced 1 teaspoon butter 1 egg 1/2 cup 1% cottage cheese 2 tablespoons flour Salt & freshly ground black pepper Non-stick cooking spray Sauté onion in butter until golden; cool in pan. In small bowl, beat egg; blend in cottage cheese, flour, salt, pepper, and sautéed onion. Heat nonstick skillet, coat with vegetable cooking spray; place four 1/4 cup scoops of batter in pan, spreading into rounds with spoon. Coo****il set, flip and coo****il lightly browned. Serve with dab of sour cream if desired. I think I will try a version without the onion, salt and pepper, adding a dab of vanilla and some splenda (this was recc. by BE also). I was also thinking I could easily throw in a scoop of protein powder...there are quite a few possibilities. I thought I'd share! Anyone else have a recipe to swap??? Shelly

I have a different pancake - almost like a crepe: 2 eggs a splash of skim milk 1 - 2 T of flour (the less flour you use, the fewer carbs, and the thinner your crepes will be. Letting the batter rest while you make the apple filling makes a slightly better crepe. Heat a skillet and spray with Pam. Pour in a small-moderate amount of batter and roll the pan around to spread the batter out into a nice circle the size of the bottom of the pan. If you chose to add more flour, you may have to spread it with a spoon. Coo****il the edges lift a bit, flip and coo****il done. You can cook them all and pile them up in a big stack or serve them out one at a time. Meanwhile, peel and chop an apple and cook it down with a little water or a bit of butter if you like. You can add a bit of splenda if you like, but I dont. Once it is a nice soft consistency, take of the heat and shake on a little cinnamon. Wrap some apple mixture into each crepe like a burrito. Yum! Once you get the hang of it, it is quicker than it sounds. My daughter loves them too. Enjoy! Julie
