Yes from a recipe off the main board. It was great. 6 eggs 1/2 cup of fat free milk 3/4 cup of fancy shredded swiss cheese 1/2 cup of pre-cooked crumbled bacon 1/2 can of spinach (squeezed dry and patted down with paper towels) garlic salt and pepper to taste I threw the eggs, milk, garlic salt and pepper into a blender bottle and mixed well, poured into a bowl and mixed in remaining ingredients. Took a glass pie plate sprayed with Pam, poured in the mixture and baked it at 350 for about 25 minutes. It was delicious and I have my lunches for the week already packaged and ready to go

That sounds DELICIOUS and I guess it's WLS friendly because regular quiche has a crust and I guess this one doesn't...it's just the bacon that worries me...doesn't it have a lot of fat....?? aren't we suppose to have low sugar & fat tolerance?

Sure! I got it from www.wlsfriends.com I post there and they have some reciepes. I adapted it a bit though for my tastes. Here goes: 7 large eggs or 1.25 cups egg beaters 3/4 cup frozen spinach (cooked and water wrung out) chopped 3/4 cup shredded cheese blend (any cheese you like) 2 tablespoons dehydrated onions (since regular ones are still off limits) 1/2 FF milk 1 tablespoon hot sauce salt, pepper, Emeril's seasoning (I like it with some kick lol) Preheat oven to 350 degrees. Mix the eggs and spices with a whisk, add cheese and chopped spinach. Spray cupcake pan with butter flavored Pam or use cups and spray those, measure 2 ozs of mixture and pour into pan. Bake 25 minutes or until center is set. Should make 9 quiches. I put all of this into www.fitday.com and it came out to: 111 calories, 7g fat, 2 g carbs, 9 g protein per quiche with regular eggs. Less fat if you use eggbeaters.
