WLS Egg McMuffin
Hello friends, I am not on the computer much, it hurts to sit in that position. I will be makikng my prescence know soon though, I promise. I do miss yu all and see from some of the headings of the posts that 'we have some trouble in river city' (isn't that the right song from Music Man - I am on a happy pill right now and not sure what I'm saying - but you know!!)
I thought maybe some of you would enjoy this wls egg mcmuffin. It's yummy. This egg sandwich will stick with you for HOURS and is loaded with
protein & good nutrients AND is portable and easy to carry with you
in the old car on the way to work, etc.
PAM
1 Egg (or equiv. plain Egg Beaters)
Splash of skim milk (may not needed with Egg Beaters)
1 slice cheese (soy cheese melts,lots of flavors, in the produce
section of the grocery store)
1/2 teaspoon Bacos or Bacon Bits
1 Thomas' new LITE English Muffin (8grams protein)
Spray some PAM (I like the butter flavored) into a coffee cup with a
flat bottom, about the size of your English Muffin, or use a small
tupperwear-like container or custard dish with a flat bottom.
Add one egg, one sliced of soy cheese, torn into quarter-size pieces
(I like cheddar or monteray jack w/peppers), Bacon Bits (some are
soy, some are real), any veggies you might like (green peppers,
mushrooms, onions or banana peppers)and a splash of skim milk.
Scramble in the cup, heat in microwave until just done (mine goes 1-
1/4 minutes; some go less than a minute). You don't want it
rubbery. In the meantime, split your English muffin, toast it and
spread it with lite margarine, if desired. Pop the egg onto the
muffin, salt & pepper the egg, and wrap in a paper towel and out you
go!
The muffin has 8 grams of protein, the egg has about 8, the cheese
about 8 and the splash of milk & other stuff, maybe 2 or 3 grams.
Anyway, you get about 25 grams of protein, whole grains, veggies and
you will be FULL for a long time. Although yogurt and oatmeal are
great choices for breakfast, they will never stick with you as long
as the WLS Egg McMuffin does. It is particularly good if you know
you won't get to eat lunch as early as you need to. This also works
great for DINNER!

You are about the smartest WLS person I know!! I sure hope I can find the English muffins here in my Commissary(Germany) and would love this idea. THANKS. BTW. I miss your posts and am delighted to hear(read) from you. Hope you are taking GOOD CARE of yourself. Hugs, Love Jacqueline

Thank you!!! I tried this yesterday morning - it was wonderful! I took the ingredients to work with me and made it when I got there! The only thing I did differently was I made it open faced using only 1/2 the muffin. I used 1 egg (scrambled), some skim milk, some bacon bits and some shredded cheese. When it came out of the microwave I placed a slice of american cheese on top and popped it into the toaster oven for 30 seconds on broil just to melt the cheese! The cheese melted around the egg and onto the muffin helping to hold the egg in place. I was full for hours!! Thank you so much - this will now be something I eat 2 or 3 times a week. You're the best!
