happy thanksgiving!
hi everyone,
i thought i just posted this but it isn't showing up. i did copy & paste part of to the main board where i am a lurker but have been too shy to post.
i hope you all will have a peaceful day, surrounded by people you love and who love you.
we were going to skip t'giving this year and just have a quiet day. i usually do all the cooking for a crowd of family & friends. so i told everyone before surgery and they made plans. we decided to go to friends in the neighborhood and be casual.
i made a pumpkin pie with splenda (the one on the libby's pumpkin can) like susan marie wrote about - making it in a water bath so it's like a custard in a casserole dish; a pumpkin cheesecake with splenda; spinach dip; and my favorite cranberry/horseradish relish with splenda instead of sugar. we'll see how it all tastes tomorrow. only with good friends would i try out recipes i hadn't taste-tested first!
we're going to a potluck saturday night and having friends over for sunday lunch so i'll be cooking then, too. i think i will assemble a really 'loaded' chef salad (turkey bacon, egg, chicken that i began marinating today and whatever other protein i can think of) and maybe make soup.
i'm down 45 pounds. i had some bracelets made for me years and years ago and the other day one just slid off my hand. my wedding ring is sliding around.
i feel grateful for this board which has helped me immensely. i will be giving thanks for my health, the health of those i love, my family & friends, and the spirit that binds us all together.
let's all check in after the weekend to see how it was for us.
