Hello again all, I'm just starting to have chicken and tofu added to my list-- any ideas on how to fix them? I used to just nuke everything before

i bout the squeeze mix for the tuna salad ...its in the mayo and mircle whip area and mixed the chicken...Chichen was boiled in water for 30 min on high and then shredded then chopped finely... then mixed the dreesin and the chicken together and made chicken salad i even made mashed tators and chopped chicken and mixed them together .... that way i could have more then just 1 thing for supper ....and it wasnt too bad either... i cant help ya with tofu...but i liked to make crab salad and crab is highin protein too

hi ruth, i have used the silken tofu (and you can get 'lite' tofu, too) in the morning as a way to stretch out my protein. i spray pam in a nonstick pan, toss in chunks of the tofu and lightfully saute it. then i add a beaten egg (that i've added a little milk to) and scramble everything together, keeping the egg really moist and soft. you can use any spices you like, e.g., salt & pepper, onion powder, garlic, etc. if i do this for lunch or supper, i've added some marinara sauce for a little flavor, if you can have this. susan

I'm a big 'seasoning' person so I like making chicken Fajitas, I just buy the pre-packaged marinade and sauteeing the chicken with some peppers and onions (if you can have them****il the veggies are soft and I might use a little bit of lite sour cream and/or low-fat cheese to doll them up. They are d'lish. Also, I bake chicken breast pieces with fresh basil and a light red sauce and it is yummy. Shredded chicken taco meat is good with a little re-fried beans. (Just bake or pan fry the chicken in water and shred it with a fork when it is done and use the store-bought seasoning) Also, I run a restaurant where our speicalty is wings. I don't eat the wings cuz they are fried, but, I'll grill a chicken breast and put my favorite (of 12) sauces on the chicken and eat it (usually one breast lasts me 2-3 meals). Make sure the sauce you use isn't butter based and it should be great. I love to cook!!! And, I love mexican food. Kell
