Eggs?
Hey Everyone.
Since my surgery Ive really liked eggs. Poached with cheese melted on top, scrambled, cooked in a pan with nonstick spray. I was just wondering how much egg you can eat? Ive been able to eat about 1/4 of an egg but today it looks like I might get in 1/2 an egg. Is that to much?

i don't know what the 'right' answer is but i can tell you how it's been for me. i've been able to eat eggs when nothing else seemed palatable. i like the idea of poaching them - i just haven't done it and i think i will tonight. i have used eggbeaters which were good but once they were too tough and i haven't gone back to them.
i am just scrambling them with a little bit of milk, using a small amount of butter in a nonstick pan, and whatever spices i want. i am scrambling them to a really really soft consistency. they go down well, stay down well. maybe because they are one of the only hot things i eat they are soothing to my stomach, too.
i range in being able to eat just a little bit of an egg to being able to eat 2 scrambled eggs.
i've also sometimes liked egg salad, mashing the egg with a little mayo and spices.

Right after surgery eggs made me sick, but yesterday I ate out for the first time in a group of people. I ordered 2 eggs scrambled soft, and was able to eat 1/2 of the order (1egg). It took me about 20 minutes. I have been timing myself a bite a miniute. I bet you will make it to a whole egg soon. Keep up the good work!!
