Asian Slaw
Ingredients
· 12 cups packed coleslaw mix
· 1 can (10 fl oz/284 ml) mandarin orange segments, drained
· 1/2 cup Light Catalina salad dressing
· 1/4 cup Light mayonnaise
· 2 tbsp soy sauce
· 1/3 cup peanuts
Instructions
1. Toss coleslaw mix and oranges in large bowl.
2. Mix dressings and soy sauce in small bowl. Pour dressing mixture over coleslaw mixture; toss gently until well coated.
3. Cover and refrigerate 1 to 2 hours or overnight. Sprinkle with peanuts just before serving.
I thought maybe you might like this one for a great healthy 4th of July salad. I hope you like it as much as my husband does--he LOVES it. I'm not a slaw person so I don't care for any kind of cole slaw--but most people do. (Always the weird one, yanno LOL)
