Taco Soup-Protein Punch

Hi Everyone I found a Taco Soup recipe on one of the other boards & tried it out.... Very Yummy. I'll post both of the recipes. I only tried the first one & figured out the Calories & protein. Not sure on the 2nd one. I used to hate any kind of beans except green beens so I was afraid of jumping into 3 or 4 different kind of beans all at once. I absolutely loved the 1st one though. Eventually, I'll try the other. 1 lb ground beef 1 can FF refried beans 1 can pinto beans 1 can shoepeg or whole kernel corn (i used shoepeg) 1 can Rotel tomatoes (i wasn't sure what these were, I used diced) 1 can chicken broth 1 pkg taco seasoning 1 pkg hidden valley ranch dressing Brown beef, drain, add all other ingredients, bring to boil, reduce heat & simmer. The longer you simmer the better. Top with cheese It will be soup consistency the first day, then it thickens overnight & is more of a chili consistency the next day. Makes 8 1-cup servings 263 calories & 10 gr protein or 16 1/2-cup servings 132 calories & 21 gr protein Top with 1/3 cup shredded cheese & add 7 more grams of protein Another recipe (haven't tried this one) 2lbs ground beef 1 med onion/chopped 1 can kidney beans 1 can pinto beans 1 can black beans 1 can rotel tomatoes 1 can diced tomatoes 2 cans shoepeg corn 2 pkgs taco seasoning 1 pkg hidden valley ranch dressing Brown ground beef & onion, add taco & HVR seasoning. Mix well. Add the rest of the ingredients & simmer. Once again, the longer you simmer the better. Top with cheese Enjoy Tammy

Tammy, Are you sure you did your math right??? how can 1 cup have 10g of protein and 1/2 cup have 21?!?!? shouldn't it have 5g? did you switch them? Bridget
