Vacation in Scotland!
See a couple of snapshots from my recent vacation in Scotland. I was already on business in Europe and took a week to visit my pen pal of 30+ years in Edinburgh. She and her family made me feel like I was coming home! I even tried haggis, if you can believe it! Don't believe everything you hear....it was actually pretty good.

OK! You asked. I got this definition of haggis on-line, but the stuff I ate was not still in the skin (see below). My friend took it out before heating it up. I tried the vegetarian version of haggis too. It had a nutty flavor. She served it with the traditional turnips and mashed potatoes. But, not the whisky.
It was, to say the least, a unique flavor. But I think I might try it again. At least I can say I ate it, and most Americans can't say that!
Oh, if you ever plan to go to Scotland, be sure to take a coat. When they say the weather there can change 4 seasons in a day, they are really not kidding!

A national dish of Scotland, composed of a forcemeat of the heart, liver and lungs of a sheep mixed with oatmeal, well seasoned and put into bags made from the paunch (stomach) of the sheep. The haggis is then boiled for 2-3 hours and left to get cold. When required for use it is simmered again for about an hour and is traditionally served with mashed turnips, potatoes and whisky.
