So i went looking thru some of egg face's recipes and came up with a combinatino of hers/mine.
I took zuchini skinned it and seeded it and took it on my griddle with a touch of olive oil till tender.
Took about 14 turkey peperoni and cut them up added them on my griddle till a little crispy.
2oz of whipped cream cheese (i used weigh****chers low in fat)
2 oz of ricotta cheese
1/4 tsp orageno
1/4 parsley
1/4 garlic powder
and low sugar marinaria sauce
and montery jack cheese
Take the cream cheese , ricotta and spices mix them all together. After you have the peperoni and zucs ready layer sauce on the bottom, zucs and pep, some of the ricotta mix and them a layer of cheese ( i did 2 layers). Then top with cheese and bake in the oven at 400 for about 20 min i only made 2 servings with this recipe cause i am the only one who will eat it. Turned out really tasty. I think if i do it again i might do just pep and add over a few piece of whole wheat pasta or yellow squash.
Just an idea i am always looking for recipes and stuff.
Protein is still kicking my butt, other than that i am doing ok lost 41lbs so far.
