Rice Pudding
~~~~~~~~
1 small package SF vanilla instant pudding
16 oz light cottage cheese
2 snack size boxes raisins
cinnamon (to taste)
dash of nutmeg
Make pudding according to the directions on the box, adding spices before you whisk pudding. Once the pudding begins to get thick, stir in cottage cheese and raisins. Place in frig and let set for about 1 hour to blend.
This is so good and it was better yesterday than the day I made it because the raisins were plump yesterday!!! I hope if you like rice pudding you will give this a try. I could not believe how much it tastes like the real deal!!
It's sorta a cross between rice pudding and cheesecake filling.
*Fun bonus question:
What is your favorite fall activity???? Baking! It's a food addiction sickness I know. I now try to create healthy recipes to cook and bake. I made a Healthy Chicken Parmesan recipe with Kay's Nautural Parmesan Protein chips and they loved it! They are sending me 2 cases of their product free. ;)
Have a great weekend!
Well, after a really fun weekend at the river last week I had my first ever 4 pound gain, can you say too much snacking? I also had my first margarita's since surgery, yes, I had two over the course of the night. I asked the bartender to go easy on me since it was my first in so long, he did, but they still hit hard!
I've worked at eating right, upping my food intake some, and the weight gained has come back off, made me very happy!
1. What types of food did you eat this week? Way too many chips, cheese, beef sticks, pretzels, fruit, meat crust pizza, chicken fajita burritos minus the tortilla, jerky, soups, chili, chicken stir fry (homemade and boy did I get sick). My newest find and love - Kay's Naturals cereals and protein chips. YUMMY!
2. What types of exercise did you do this week? walking, and not enough.
3. How much weight did you lose? the 4 pounds I gained! Total loss? 192 pounds gone forever, or until I overindulge again! ;)
4. What was your biggest challenge? Too much snacking while with friends at the river.
5. I'm on the never ending search for underwear, have you found any that work? what brand? Honestly I love Jockey French cut, but since loosing weight and changing sizes I buy cheaper ones at Lane Bryant. They have really fun colors that I would have never worn before. I'm in size 14's until I do a TT, and that's not happening anytime soon as far as I'm concerned.
*Fun bonus question:
Do you know how you are spending your Halloween, what are you doing? Are you dressing up???? It's our Great Danes favorite day of the year we put up a baby gate at the front door and they greet all the kids with festive collars on. They have a blast and love kids. We'll be home handy out tons of candy and I'm not dressing up.
Have a great weekend!
