WOW, it was sooooo yummy! Initially I wasn't sure about the cottage cheese part, but you couldn't even taste it. It was a true mouth *******! Thanks!

Please continue passing on the recipes.
Thanks again!
Topic: RE: Healthy Chicken Parmesan Recipe!
Hi Jan,
Sounds like another good recipe. I already put my order in with Kays for samples for my support group. I'm definitely going to order the parmesan protein chips for your recipe. I guess it would work nicely with filet of sole or another type of fish as well?
Thanks for sharing your recipes!

I made a batch of this today. What I love most it is has so much protein because of the cottage cheese and the milk in the pudding.
Topic: Healthy Chicken Parmesan Recipe!
2 - 1.5 oz bags Kay's Natural Crispy Parmesan Protein chips, I ran these through a food processor to make crumbs
3 - large boneless skinless chicken breasts (sliced each into in 4 long pieces)
1 cup freshly grated parmesan cheese (split in half)
2 eggs - beaten
No sugar marinara sauce
Dip each of the chicken pieces in the egg, then roll in the crumbs, then dip back in the egg and roll in Parmesan cheese. Place on a cookie sheet sprayed with Pam. Bake at 375 for 25-30 minutes, turning half way through.
Place 3 pieces on plate top with warmed marinara sauce and more Parmesan cheese. Yummy! Serves 4.

Topic: RE: Friday Five - Weekly Update!
Hi Maryellen -
I used to go to Starbucks almost daily, I had tons of girt cert. from my birthday. Once I had to pay for it myself I changed! I decided I could do that at home, heck I watched them long enough to learn how.
I buy DaVinci Sugar Free syrups (carmel and butter rum are my favs) and have a Senseo coffee maker (it makes one cup at a time). While in Europe this spring we also found they had tea pods for the maker so I bought the holder (it works in my machine) and I now make hot tea too. Love it!
For the Chai tea misto, it's actually half hot Chai tea (from the bag) and half steamed non fat milk, I add Splenda. If you get it at Starbucks you need to tell them to make sure they use tea bags. The Chai syrup is way too sweet and I won't try it.
I am so darn addicted to the Kay's Naturals! I even came up with a recipe for Healthy Chicken Parmesan and submited it to them - they in turn loved it and they are putting it in their next newsletter and sending me 2 free cases of my favorites! Boy was I happy!!
I'll post the recipe for you guys.
Jan

Hello,
1. pizza, gorganzola salad, mussels marinara, lots and lots of cheese cubes, eggs, yogurt with fruit salad and cereal, stuffed pepper, stuffed eggplant, grilled veggies with cheese on top, soups.
2. Went to the gym 3 times.
3. Nada, but maintained 120lb weightloss!
4. My biggest challenge this week was not eating the bad breakfast choices that were offered at the meetings I attended (bagels, croissants, rolls, muffins-all my favorites presurgery!)
5. I've always spent a lot of money on my clothes, presurgery mainly because they were over priced in the big girl stores and now, because I actually look good in so many that I can't seem to resist. I've cried both pre surgery and post surgery in a few dressing rooms! Having to buy because it was clean and I despretly needed something and now because I look and feel amazing in a size 6P suit!
Favorite fall activity....Yikes, I don't think I have one, how said is that?

Hi Jan,
Sounds yummy! I'm going to the store today to purchase the ingredients.
Maryellen
PS Cozy Shack now makes a "no sugar added" rice pudding that has very little sugar and only 14 grams of carbs per serving, well worth it, although, I usually add splenda.
