Rice Pudding ~~~~~~~~ 1 small package SF vanilla instant pudding 16 oz light cottage cheese 2 snack size boxes raisins cinnamon (to taste) dash of nutmeg Make pudding according to the directions on the box, adding spices before you whisk pudding. Once the pudding begins to get thick, stir in cottage cheese and raisins. Place in frig and let set for about 1 hour to blend. This is so good and it was better yesterday than the day I made it because the raisins were plump yesterday!!! I hope if you like rice pudding you will give this a try. I could not believe how much it tastes like the real deal!! It's sorta a cross between rice pudding and cheesecake filling.

Hi Jan, Sounds yummy! I'm going to the store today to purchase the ingredients. Maryellen PS Cozy Shack now makes a "no sugar added" rice pudding that has very little sugar and only 14 grams of carbs per serving, well worth it, although, I usually add splenda.

I made a batch of this today. What I love most it is has so much protein because of the cottage cheese and the milk in the pudding.

Hi Jan, WOW, it was sooooo yummy! Initially I wasn't sure about the cottage cheese part, but you couldn't even taste it. It was a true mouth *******! Thanks! Maryellen Can't wait to try the chicken parm. Please continue passing on the recipes. Thanks again!
