I took a cooking class!

Hi all- I had my first lesson in a cooking class I signed up for last night. I am taking it at the Institute for Culinary Education here in Manhattan -- I know your probably going-- what? are you crazy? Food class? BAAAAD. It was fabulous-- It is a three session course on Fish and Shellfish preparation. Last night was a blast-- I learned how to fillet fish, shuck oysters, make fish stock, kill (I know I am evil) and cook lobster; tips for not overcooking fi**** was great. While some of the recipes were fattening, I think most of the recipes can be altered without altering the taste. And I definitely got my protein in ;) Final menu included: Curried lobster salad -- I will substitue non-fat yogurt for the mayo when I make it. Oysters Red snapper in dashi Salmon in lemon sauce Shrimp dumplings --- wonder if you could use a nappa cabbage instead of a wonton? mussels with peppers and tomato salad Crab cake-- I stayed away from that one-- I actually don't like them or any fried food since the operation-- weird, huh. It was great-- I feel like I can cook amazing food that is healthy now.

Oooh boy, I can't stand any type of seafood- and just reading your list made me sick to my stomach but I'm SO GLAD that you are excited about your class. Hey, I think it's GREAT to learn how to cook your favorite foods- we still have to eat and seafood is loaded with protein! I wish I could take a mexican or chinese cooking class- those are my favorites! Have fun, you little gourmet chef you!!

Do you know, fish is really the only type of meat besides ground meat that sits well in my stomach since surgery. If I eat chicken or turkey my stomach sounds like a grizzly! Funny how we are all different, isn't it?

Sounds like a lot of fun. Nothing wrong with learning how to cook wonderful meals. We still have to eat.....just not as much. Fish is so good for you. Pam W

Wow, how fun! I think that is fabulous you are taking a cooking class! I find myself craving more flavor, rather than a lot of the crap I was eating before. Hats off to you for taking this step! I sometimes find myself watching the food network. Oh my, that can be hard! Keep us in the loop w/how it's going. It was fun to read what you are making. Have fun, Lisa
