Recipe- Yummy dinner
Okay, so far everything I made at home has ended up in the freezer (or the garbage) for a few weeks because my tummy didn't like it. (Turkey meatloaf; Chili: Thai cucumber salad, etc..
Today I actually whipped up something that I could eat- It was a great recipe-- so if you like shellfish here is a quick, pretty economical, and tasty dish.
Mussels in red clam sauce.
Mussels are the economical shellfish. I bought them at a store that had already cleaned them and they were still only 2.99 lb!
Boil water and throw the mussels (1lb) in for 2-3 minutes. Strain and run under cold water. Any mussel that does not open DO NOT EAT. Set aside.
Heat non-stick spray in a skillet and add about 2-3 teaspoons of minced garlic (lazy me I buy the preminced in water and keep in the fridge).
Saute the garlic and about a tablespoon of tomato paste. Add a teaspoon of dried basi (or about 1/4 cup chopped fresh) and dried oregano (or about 1/4 cup chopped fresh). Add 14 oz can of crushed canned tomatoes. Stir and add 1/4 C clam juice and 1/4 cup of red wine and bring to a boil.
Add the mussels and let simmer for about 1-2 minutes.
Remember 1 lb of mussels is about 9-10 grams of protein-- it is mostly shell-- so you would want to increase the amounts if you are cooking for more than 2.
