I had pancakes for breakfast! Can you believe it?

Yes, it is true! I had pancakes for breakfast. The woman who owns the food store where I purchase all of my high protein items gave me a recipe for the perfect protein pancake. I couldn't believe it until I tried them for myself. She is awesome as far as I am concerned! I thought that I would pass this recipe on to the rest of you. I topped mine with a syrup that has no calories, no sugar, no carbs, and as if that isn't wonderful enough...fat free. ======================================================= Perfect Protein Pancake Servings - 3 2 Eggs 1/2 cup Ricotta Cheese, Part Skim Milk 1/4 cup Naturade Whey Protein Powder 1/2 teaspoon Baking Powder 1/8 teaspoon Salt Spray a heavy skillet or griddle with nonstick cooking spray ad place it over medium heat. In a mixing bowl, whisk together the eggs and ricotta cheese until quite smooth. Whisk in the whey protein powder, baking powder, and salt, only mixing until well combined. Drop batter on the skillet or griddle by the tablespoonful. When the bubbles on the surface of the pancakes are breaking and staying broken, flip them and cook the other side. Serve with butter and sugar free syrup, sugar free jelly, Splenda and cinnamon, or mashed berries. 5 pancakes are considered a serving. These freeze beautifully and reheat well in a toaster oven or microwave. Yield: 14 Nutritional Information: Calories - 180 Total Fat - 7 grams Total Carbohydrates - 4 grams Protein - 25 grams ======================================================= I altered the recipe a little. I didn't have any Naturade Whey Protein Powder so I used some of my french vanilla protein powder shake mix. I added an extra egg as it was quite dry. I also made them into pancakes about 4 inches in diameter and was able to eat one just fine. All I can say is that it was very nice to eat something very similar to what my family was eating and actually enjoy it. Especially since I knew that I was getting a great deal of protein in that one meal! If anyone else has some recipes that they think that we might enjoy, by all means, please share! I am always looking for new ways to get my protein in without having to suck down another protein shake or smoothie! Just me...Jess

Hmmmmm. I think I would prefer just eating a regular pancake with sugar free syrup. It can't be that bad for us can it? As long as we don't eat platefuls (which we couldn't anyway) every day? I just like the idea that I am getting in protein from it. I am not so sure that you would get protein from regular pancakes. Ricotta cheese is very good for you as well! Thanks for the other sites...I will check them out immediately! Just me...Jess

True- but you know, I hate to sound like I am shooting down your recipe, but you can't heat protein powder over 130 degrees or it breaks down. I am going to look into this more. I would hate to find out that it's all wasted.

Ok, I found an answer and I was wrong! Yippee! I'm glad to be wrong on this! Here's a quote: "IMPORTANT NOTE: high cooking or baking heat does NOT destroy the protein or the protein value, but in liquids, the heat can make the proteins more clumpy. Even if this happens, you are still getting your protein. It's much like cooking eggs or meat. They change texture when cooked, but cooked, they still provide complete protein." I found this on the Unjury website (my favorite protein). It is good to know. I am going to try your recipe! Thanks!

Ladies that sounds like alot of work. I bought sf, ff pancake mix and they are great. Plus waffle mix with the sf, ff no carb syrup, maple flavor. Try it Big Y sells it. I don't know about the protien though. But I'll look into it ok. Thanks for the recipe though. Cheri
