breakfast egg McMuffin
At my visit with the Nutritionist yesterday she gave me a good breakfast idea. You probably won't be able to eat all of one...but it's full of protein. And obviously this isn't good if eggs aren't going down.
Egg McMuffin
Ingredients:
One egg uncooked, 1/2 english muffin, 1 slice ham deli meat, sprinkling of low fat cheddar cheese.
Spray a coffee cup with pam. Crack the egg into the coffee cup and microwave about 50 seconds on high. This makes a nice poached egg (Make sure it is fully cooked- not liquidy or runny). Toast 1/2 of english muffin. Put egg on top sprinkle cheese and the top with slice of ham.
The cool part is the coffee cup method makes the egg the perfect size for the english muffin.
