Go Ahead! Have Some Pizza....
This works great. The crust is sublime and has no carbs - or just a trace... I had a bunch today and felt no pain whatsoever.
Crust:
3 zucchini grated
3 eggs
salt
pepper
dash of basil
1/2 cup part skim mozzarella
1/2 cup Parmesan
1 cup soy flour
Sauce
store-bought no-sugar pizza sauce
Toppings:
1 cup mozzarella shredded
1/2 red onion diced
portabello mushrooms chopped
Add other stuff if you want...
Make the crust first. Shred the zucchini, add a little salt and let it sit for like 15 minutes. Strain through a colander and get out as much of the excess liquid as you can.
Now, preheat the oven to 350.
Put the zucchini, eggs, soy flour, 1/2 cup mozarella, salt, pepper, basil and parmesan in the food processor and make a doughy paste. I add garlic salt to this.
Spray a 9 x 13 pan with some Pam or some butter flavored spray.
Spread a thin layer of the doughy stuff into it and bake for 25 minutes.
Then sprinkle or spray on some olive oil on the crust and put it under the broiler for 5 minutes.
Add the sauce. Add the toppings. (I saute the toppings in aboput a tblsp. of olive first).
Bake for another 25 minutes on 350.
This is totally yummy and guilt free.
