Pancakes Anyone??

Getting tired of plain eggs for breakfast? Or for any other meal for that matter? Try this recipe, I was really surprised by how well it sat in my tummy tonight. Mix together: 1/3 cup oatmeal 1 egg (or egg substitite) 3 oz's yogurt ( I like vanilla but you can use any flavor, even those with fruit) sprinkle cinnamon (optional) 1/4 tsp. baking powder Spray a non-stick pan with cooking spray and cook over medium heat till brown, flip and cook till done..3 to 5 minutes depending on heat. Top with applesauce or apple butter or your favorite fruit. I'm not posting nutrtional info since it will vary depending on the ingredient you use. You could also add non flavored protein powder.

Hi Merritt, Use uncooked oatmeal. It absorbs the moisture from the egg and yogurt. CJ
