Here is a yummy Taco Bake recipe I found on Sparkpeople.com. I LOVE their site for recipes! Ingredients 1 lb lean ground turkey 1/2cup diced onion 1/2cup diced red/green pepper 1 8oz package reduced fat cresent roll dough 1 can pinto beans,drained 1 pkt taco seasoning 16 oz tomato sauce 1 cup fat free cheddar cheese Directions Preheat oven 375. Brown turkey,onion,pepper and drain. Spray 9x13" baking dish w/cooking spray. Unroll cresent rolls. Pinch together to make crustand bake for 6 min. Meanwhile, add tomato sauce, beans, and taco seasoning to turkey: mix thoroughly. Top crust with meat mixture and bake 10min. Top with cheese and bake an additional 5 minutes. Divide into 8 servings. Number of Servings: 8 Amount Per Serving Calories: 222.2 Total Fat: 8.2 g Total Carbs: 20.0 g Dietary Fiber: 4.4 g Protein: 19.4 g

I always read blogs and recipes from the world according to eggface ( a fellow WLS patient here on OH http://theworldaccordingtoeggface.blogspot.com/ She has a TON of awesome recipes and good snack ideas etc. I thought this looked good and I thought I would try it and share it with you guys Shelly's Chicken Cacciatore with Beans 1 Red Onion, chopped 1 Yellow Onion, chopped 2 Red Peppers, chopped Olive Oil Kosher Salt Black Pepper 7-8 Chicken breast tenders cut into 1" piece, marinated in a T or so of Italian Dressing for 4 hours (at least) 1 tsp. Italian Seasoning 2 cloves Garlic, chopped 1 can Diced Tomatoes (14.5 oz S&W brand is my fav) 1 can Cannelini Beans (14.5 oz. can), drained Parmesan Preheat oven to 425 degrees. Toss onions and pepper with olive oil, salt and pepper and roast in oven for 50 minutes, turning once halfway through cooking time. Saute chicken that has been marinated till golden. Add Italian Seasoning and garlic. Add diced tomatoes and beans. Add roasted vegetables with all juices. Simmer till warmed through about 5-7 minutes. Serve with a snowfall of good parmesan cheese.
