Tuna Cakes 1 small can of tuna in water drained 1/4 cup of bread crumbs 1 egg 2 Tbl light mayo 1 Tbl of lemon juice 1/4 diced onion salt pepper Put everything into mixing bowl and mix well.Coat a frying pan with non stick spray or olive oil and put pan on medium heat. When it heats up place patties in pan. Let sizzle till brown on one side and then flip over and do the same(about 5 minutes total). Once both sides are brown turn heat down to between low and medium and let it cook for about 3-4 more minutes. Take out and enjoy. If desired, add a few drops of picante sauce on the dish for flavor. You can use any hot sauce also. I don't have the nutrition info on this yet, but I will find it out and post it in this thread later today. Happy cooking!

This last week I made pepperjack enchiladas, which went down really well and tasted really good! Any cheese can be substituted, I just like a little spice! I can of enchilada sauce 1 can diced green chilies milk paprika corn tortillas cheese Mix enchilada sauce, 1 can milk, some paprika in a bowl. Microwave on high for 5 minutes, stirring every minute. After complete, mix in 1/2 cup of cheese until melted. Put some sauce in the bottom of a lightly greased (Pam'd) pan. Place corn tortilla down. Put cheese and some diced chilis on top. Another tortilla, more cheese and chilis. Repeat 3-4 times (3-4 layers). Pour enchilda sauce on top and bake until heated through. Usually about 30 - 40 minutes. Yummy! I don't roll the tortillas...just too lazy and tastes the same anyway. And of course you can add chicken or another meat to add to the protein, but I can't eat too many meats, so opted just for the cheese.

Here is the nutrition info per tuna cake, and the recipe makes 2 of them. You can cut back the cholesterol and fat by using 1/4 cup Egg Beaters instead of the egg.
