Because I've been a slacker and have been completely done in by my new job and didn't post Monday's recipe, here's one for the helluvit, on Wednesday Another pizza-ish recipe, and one I haven't tried yet but I'm making it this weekend as soon as I get to the store for the ingredients. This one came highly rated by many users at Sparkpeople.com and you can substitute low fat ingredients where possible without changing the taste. Upside Down Pizza Ingredients FILLING: 1 pound Ground beef 1 medium onion, chopped 1 (14oz.) jar Pizza Sauce 6 oz. Turkey pepperoni 16 oz. Mozzarella cheese, shredded CRUST: 1 cup 2% Milk 2 Eggs 1 tsp. Oil 1 cup Flour 1 tsp. Basil 1 tsp. Oregano 1/2 cup Grated Parmesan cheese (opt.) Directions Preheat oven to 400. Coat a 9x13" pan with nonstick cooking spray. Brown ground beef and onion until meat is done, drain. Add sauce and pepperoni, heat through. Pour into prepared pan and sprinkle with cheese. Mix milk, eggs, oil, and flour till smooth. Add spices and cheese. Pour over top. Bake uncovered for 25-30 minutes or until crust is golden. Cut into 12 equal pieces. ok ok i stole this off another board BUT i wanted to participate and this sounds good. South Of the Border Casarole yellow rice cooked and drained hamburger meat browned and drained taco seasoning 1 can of rotel tomatoes 8 oz. cheese 1 Bag of Corn chips shredded lettuce diced tomoatoes ranch dressing Cook rice as directed on package. If any excess water, DRIAN. While rice is cooking, brown hamburger meat. Strain excess fat. In pan of cooked hamburger (large pan) add taco seasoning mix, rotel tomatoes, cheese. Mix well. Add rice. Pour into casserole dish and bake until bubbly. To assemble: Place corn chips on plate first. Add taco mixture, lettuce tomatoes, and then ranch dressing on top. May also use salsa if desired.
