I got this receipe from Unjury.com and plan to make it this weekend. Sounds yummy! UNJURY Protein Pumpkin Pudding (please see comments at bottom) Ingredients 1 Package ( 1 oz) Vanilla Jell-O Sugar Free Instant Pudding Mix 1 Cup skim milk 2 scoops Vanilla UNJURY?protein powder ½ cup canned pumpkin (not pumpkin pie mix) ½ teaspoon pumpkin pie spice Measure 1 cup of cold fat free milk (package directions calls for 2 cups) Add two scoops of Vanilla UNJURY to the one cup of cold milk Mix thoroughly the dry UNJURY in the milk by shaking or stirring Then follow pudding package directions by putting the Jell-O Sugar Free Instant (Not Cooked) Dry Pudding Mix into a bowl. Add pumpkin pie spice to dry pudding mix Blend spice and dry pudding mix thoroughly with a fork Pour in the previously-mixed UNJURY-and-milk. Add ½ cup canned pumpkin Stir/Beat until thoroughly mixed (a wire whisk or mixer works best) Place in small container and chill in the fridge. Top with 1 Tablespoon Fat-Free Cool Whip. Enjoy! Makes 3 - 1/2 cup servings Per Serving: Protein 17g; Calories 110; Carbohydrates 10 g _________________________________ Comments: Because this IS a high-protein low-carbohydrate recipe, it isn't comparable in taste to a classic pumpkin pie, but we think you'll enjoy it!
