Whatcha eatin???

So what are all of you Junesters eating? What protein is going down well? I don't eat meat (except for fish...but that isn't going down well), or eggs, so finding protein is difficult. Some of the meatless burgers go down ok, but not many of them. Got some recipes you can share? Thanks for the help!! Jeannie

I've had a hard time with meats- chicken does NOT like me at all. Some ground turkey is ok, if its in the Turkey chili. Cheese works well and so does Cottage cheese. Thank goodness. We do a recipe day on Monday's and you could look back through the older post to get the Turkey Chili and some other good ones.

I'm a pescetarian, so I can't do the turkey, but I'll definately look back for some Monday recipes. I'm sure I'll find something. My husband was just diagnosed with Celiac disease also, so finding anything we can all eat is almost a lost hope. Fun fun!!

Well, I have learned to mix cottage cheese in with stuff I'm eating to help keep it moist and keep it from getting stuck. A perfect example was tonights dinner of 3 oz of pre-cooked grilled chicken breast strips. Within the first 3 bites I felt everything plug up and it felt like a rock was sitting in my chest. So I slap a couple of tablespoons of mild picante sauce and about half a cup of cottage cheese on my plate, and make sure I mix it all up well. Everything is now going down just fine and I got a meal that is 27 grams of protein, 160 calories and 3 grams of fat. Can't beat that! Donna

For lunch today I made myself a vegetarian chicken parm that was really good. I took a veggie chicken patty and baked it about 1/2 way, then topped it with no sugar added sketti sauce and shredded cheese and finished baking it. It was yummy. I bet I could change it up a bit by switching from italian to cheddar and picante...make it a mexican flare. I forgot about good ole cottage cheese after surviving on it for almost a month. I could dig out some of that again.
