***Monday is Recipe Day***
I got this recipe from Bariatriceating when I ordered a sample pack before surgery:
1 to 1 1/2 lb skinless, boneless chicken thighs (remove visible fat and cut into thirds)
Using vegetable spray, brown in skillet. Add 6 oz chicken broth (and garlic to suit your taste) and simmer (covered) 20-30 minutes until tender.
Add 3/4 c of a prepared marinara sauce (I use Classico Spict Tomato and Basil). Cook uncovered another 5-10 minutes until the liquid reduces and thickens.
Nutrition per ounce:
Calories 41; Fat 1.5 g; Carb 1 g; protein 8.5 g
I've made it with boneless/skinless chicken breast (to avoid having to cut off fat) and it was still juicy enough for me. I also usually add chopped onions, green pepper, mushrooms and fresh basil. I haven't calculated the nutritional info on these variations.
