***Monday is Recipe Day***
Ok everyone, I thought a weekly favorite recipe thread might help everyone out with new ideas for meals since we are all basically around the same surgery dates. Feel free to post your favorite recipes and if possible include nutrition info so everyone can make an informed decision on whether or not to try it.
My recipe for today is PK's Meat Crust Pizza, courtesy of PlumpKitty from the RNY boards (aka PK):
Pk's Meat Crust Pizza
1 lb of ground beef extra lean
Pizza Sauce
Light Mozz Cheese
Any other Pizza topping your choice
20 All wheat Crackers Crushed
2 eggs
Mix the ground beef, eggs, and crushed crackers together and press into a cooking sheet or round pizza pan. Bake at 350 for 10-15 minutes until brown. Then top like a regular pizza, cook an additional 10-15 minutes. Cut into an 8 slices. 1 slice = 1 serving.
I use turkey pepperoni, mushrooms and black olives on mine, so the nutrition info might vary a little. Here is a calculation of a serving with the toppings I added:

Mine is the Crustless Mini Quiche. I made these over the weekend and they are delish! I didn't put in the broccoli as I don't like it, but it was still good! I can't remember where I got the recipe but it was on here somewhere.
Crustless Mini Quiche
Ingredients:
7 large eggs
1/2 cup skim milk
1 cup low fat Monterey jack cheese
4 oz diced lean ham steak
1/2 cup chopped onion
1 cup chopped broccoli (minus the stems)
garlic powder, salt and ground pepper to taste
Directions:
Whiz up your eggs, milk and seasonings in your bullet or food processor to get it real fluffy. In a separate bowl add your broccoli and onion with some water and microwave this for 1.5 minutes (to start the cooking process so they aren't all hard and crunchy in your quiche). Add this to your mixture. I poured my egg mixture into a bowl by the way then added the veggies. Then add your cheese and dice ham. Spray a 12 cup muffin pan with pam or whatever you use. Then by dipping a 1/4 cup measuring cup into the mixture get good scoop of the chunky stuff and the egg solution and pour into each cup. I almost went to the top, maybe a 1/2 inch or so down from the top. Make sure they are all even then bake at 350 degrees for 30 mins.
With Cheese for each muffin:
92.6 cals, 5.4 fats, 1.9 carbs, 8.8 proteins.
Without Cheese for each muffin:
63.1 cals, 2.6 fats, carbs don't change hardly at all, 6.2 proteins.
So, I love Italian food. I whipped this up to give me a fix...
Pasta-less lasagna:
1 small eggplant sliced
1/2 lb ground turkey [browned/drained]
1 c. lowfat cottage cheese
1 zucchini, cut long ways
1 can pizza sauce or tomato sauce
1 c. lowfat mozzarella cheese
Layer ingredients in a small glass baking dish as listed. Bake at 375 for about 45 mins.

Any brand or type of whole wheat crackers will work. I've made this twice so far, once with whole wheat Wheat Thins, and once with Carr's brand whole wheat crackers. Carr's brand is way better IMO, but they are harder to find. They are in a small box like a gourmet cracker (if there is such a thing) but any brand or type will work.
