Hey Gang, Lets post recipes. I need new ones. If we all post what we like, then before long we will each have lots of new things to try. I have been doing low carb. Cheesy Chicken Green Bean Casserole 2 cans french cut green beans- drain well 1 med onion 2 stalks celery 2 tbsp butter 1/2 cup heavy cream 1/4 cuo mayo 1 cup assorted cheese- ( cheddar, pepper jackwhatever kind of cheese you have shredded on hand) 1/2 tsp lite salt 1/4 reg salt 1/2 tsp pepper 1/2 tsp garlic powder 5 small boneless chicken breast Bake the chicken until done , put into the bottom of casserole dish put everthing else into a food processor, pour over chicken cover and bake 30 minutes. You could have this as soon as veggies are allowed, about 3 months out going by my dr. This is good, my whole family enjoys this one

I've been enjoying a simple taco salad lately. A good way to spice up the protein. 1/2 pound lean ground beef 1/2 pound ground turkey. 2 taco seasoning spice packets. Simply brown the meat and add the seasonings. Serve with lettuce, shredded cheese, salsa, reduced-fat sour cream, green chilies, whatever you like. I also sometimes will put it into a low-carb wrap for a burrito kind of thing although the low carb wraps don't hold together terribly well.

Here are a couple I have been using. I am not big on following recipes but usually just get the main idea from them and then adapt to my tastes. Tostadas Bake whole corn tortillas until they are crisp. I use the toaster oven. Put anything you like on top such as: Beans Taco meat (beef, pork, chicken or turkey) cheese lettuce tomato salsa sour cream olives onions I usually just do beans, cheese, tomatos and taco sauce for a really quick meal. DS loves these. We used to fry them until I realized it was much easier and more healthy to bake them. They taste just as good too. Mini Omlets I was getting tired of scrambled eggs so made an easy change. I scramble one egg in a cup and add a dash of water or milk. I pour it in a small fry pan and roll it around to fill the bottom of the pan. When it it looks pretty well set I loosen the edges and flip it over. Then I place whatever toppings I want on it. When all is warmed I slide it out of the pan onto the plate flipping it in half with the edge of the pan. My favorite lately is to chop one small pre-cooked sausage patty into the egg before I put it in the pan. Then I put LOTS of cheese on it. www.hungrygirl.com I get a daily email from this website with lots of low cal/fat recipes. There are lots of recipes for yummy stuff that she makes over to be more healthy. She is really funny and knows her food. She gives all the nutrition stats and even the Weigh****chers points. Thanks Daniel and Michi girl, you both have given me different things to try and I will. Seems like I have got stuck on what I eat and dont eat a wide variety. I have got until I want to cheat and go back to my old way of eating. I dont want to do that. I must have a split personality, one wants to be good and the other says I am tired of this get a big milky way and forget it. I want do this however, just think of it from time to time.

Tonight I'm fixing stuffed chicken breast. Get some boneless chicken breast and hit with a meat mallet to get it relatively thin. I'm putting in some crumbled bleu cheese and scallions in the middle and then folding the chicken around the rest. Bake 350 for an hour or so til the chicken is done. Pour some butter over the chicken before you put it in the oven and baste every 15 minutes or so to keep it moist. I season the outside with some garlic powder and paprika. Flexible recipe as you can add any filling you like to change it up.

Bake for 400 for an hour or so. 350 is much too slow. Baste often! Did turn out nicely though.

I am going to try this tomorrow Daniel, I would today but I cooked beans. Pinto beans have been my favorite thing since surgery.
