Mmm... tomatoes!

Tis the season! I am finding that one of my very favorite treats is to peel a tomato, cut it up into pieces, and dash some salt on it. They are so juicy and refreshing... Yum!!!! I have also discovered that I tolerate Wendy's chicken nuggets quite well. 99 cents for 5 of them - you can't go wrong there! Let's see, I have also been on a kick of rolling deli meat up with cheese. Mega protein and quite yummy! Here's a tip: if you go to a sub place, I am finding that some of them will let you order just the "extra" meat portion. Or they charge us double meat for whatever my husband is having and let me pick what I want. Oh - and fresh fruit!!! I think not being able to drink with our meals makes eating tomatoes and fresh fruit seem like a guilty pleasure. My mouth is watering just thinking about it! The last two weeks i been hooked on: CUBED pieces of cold watermelon (seedless kind), canteloupe and strawberries w/ cool whip and splenda YUMMY treats. THIS week i also as a meal a side order of KFC's mashed potatoes at $1.39.....what a cheap meal huh!!! I have to get to a farm stand and get some summer tomatoes now that there ripe...i bet ill enjoy them too! LISA 310/233/Onderland somewhere

Me too with the cheese rolled up in the deli meat slices. I used to do that before the surgery for a quick, on-the-road protein lunch too. Re the chicken nuggets---aren't they full of fat and calories though? I love beans anyway I can make 'em! Heated up with red onions,melted cheese, and a dollop of sour cream. Mmmmmm goood. But a trip to the bathroom is not far behind when I enjoy that little meal! Has anyone tried tortillas? How do they stay down? Dying for a double cheese burger from McDonalds! With fries. And not just 2 bites, but the WHOOOOOLLLLLE thing! Dream on,huh.

Lisa, Yep - my husband loves what a cheap date I am now!!! Sharon, Honestly, I have been so limited in what I have been able to tolerate, I am happy to take whatever I can get! Besides, I can only eat about three nuggets. I have done tortillas - cheese quesadillas are another good food, but only if made dry. I ordered one at a restaurant once and couldn't eat it because it was so greasy! So far, I only like the ones I make at home. I used to love beans also, but I think I got "beaned out" on my pureed stage! Nicole

I do the deli meat and cheese roll up thing too! Yummy! Right now I'm enjoying watermelon. A LOT! Can't eat too much of it though, or I end up sitting on the toilet for a long time. lol Connie

AS I live right next to the Tomato Capital of Canada (and the Tomato Festival is happening right now in Leamington) which is home to HEINZ ketchup, I thought I'd drop a line to everyone about a great recipe that is easy to make and has some protein in it. Field tomatoes, cut anyway you like. Cucumbers, cut anyway you like Kraft Classic Herb dressing (they don't make it in light format in Canada) Light Feta Cheese, cut in chunks, as much as you think you can eat. Mix all four together, best if you let sit for a half an hour so the tomato juices can seep out of the tomatoes. Serve as a side dish with chicken fish whatever your heart desires. So simple but yet so good. Silly.
