What's for lunch???
Hi Shelley! I had my surgery one day after you. I'm a big soup fan; it is very filling and satisfying. But I don't mean thin, brothy soup. I mean, thick hearty soup. I found a line of low fat soups in Trader Joe's (don't know if you have them where you are), but it's by "Amy." There is lentil and bean and bean/chicken, etc. I also eat the Campbells bean and bacon and split pea (it's not low in fat, but you eat so little of it at our stage that I don't see the harm). I put my tsp of margarine (fatty acids) in a mug with 1/2 cup of soup (non-diluted), and then add a handful of cheddar cheese. Maybe some soy milk too to thin it out a bit. I even season it with a little garlic powder or onion powder for taste. Microwave on low for 5 minutes (low is important, because it will retain the thickness---gets real thin on HIGH). With the cheese added, the soup gets very thick and gives you close to 8 oz of soup altogether. Takes about 35 to 40 minutes for me to finish. VERY satisfying. Hope that inspires you! (Oh, it also gets in a good pack of protein too.)
Another idea. I found a product called The Good Burger by a company called Yves. It's basically textured vegetable protein. I think they have different flavors, but I bought the veggie chicken flavor. They are formed into 4 patties, are packed with protein (15 grams per patty), and I can eat 1/2 patty in a sitting. You'd never know it isn't meat---tastes kinda like sausage actually. Seasoned and spiced nicely. I cut the patty up into bite-size pieces and saute in a pan in margarine. I then cover it with about 1/4 cup cheddar cheese. Cook til cheese melts (a minute or so), and I serve it with a dollop of light sour cream. It is DEEEE-LICIOUS. I bet it would be good with eggs too, since it tastes so much like sausage.
Looks like Lisa and I both had shrimp on the brain today!
I'm having a hard time with anything with mayo or salad dressing in it lately....not sure why....just grosses me out suddenly.
For lunch, I made a shrimp dippy/kind of spread thing:
low fat cream cheese (8 oz)
1 can of baby shrimp drained and rinsed
About 4 TBSP chili sauce
Mixed it all up....and ate about 2-3 TBSP on wheat melba toast. MMMMMM yummy!
I love those little baby shrimps in the can. My nutritionist recommended them because they break up easy...and she was right. Real easy on the pouch.

It's Sharon again. Re the cheese, it is the low fat cheese (2%). Only has 6 grams of fat in 1/4 cup and 7 grams of protein. But you gotta listen to your doctor. For me, it just adds so much flavor and richness. But I'm glad you sent in the post; the responses about the shrimp sound wonderful. Eggs are sticking in my little pouch like pebbles so I'll stay away from them.
