How to cook for one?
I got a great book called "Eating Well after Weight Loss Surgery" that has wonderful recipes that are WLS-friendly. Even tell you how to prepare and serve them depending on where you are in the recovery process and which surgery you have.
The authors are Patt Levine and Michele Bontempo-Satay. I got mine on Amazon. Good luck!

Being a single girl, I often cook for one. All I can say is that it takes some practice. If you use recipes when cooking, cut the ingredients so you'll only have one or two servings. I have also found that cooking a few extra servings is helpful too. Be sure to use either low fat or fat-free ingredients. I bought a bunch of those little food storage containers that can be kept in the freezer. After you cook your meal, just separate it out into individual servings. That way, if you're in a hurry or just don't feel like cooking, all you have to do is throw it in the microwave. Good luck.
