Topic: Tempting Tuesday's Receipe - Turkey Ratatouille
Turkey Ratatouille
4 servings
Ingredients:
4 tablespoons olive oil - divided ( i use cooking spray on the meat to cut down fat)
2 pounds turkey cutlets ( can use chicken or even pork cutlets if you wish)
1 Japanese or small Italian eggplant - cut 3/4" cubes
1 small zucchini - cut 3/4" cubes
1 small red pepper - cut 3/4" pieces
1 cup sliced mushrooms - (4 oz)
2 garlic cloves - pressed
1/2 cup tomato puree
= (such as Pomi)
1 teaspoon dried basil
1/4 packet sugar substitute
Salt - to taste
Freshly-ground black pepper - to taste
Preparation Method:

Heat 1 tablespoon oil in a large skillet over medium heat. Sprinkle cutlets with salt and pepper. Cook cutlets 3 minutes per side, just until lightly golden and cooked through. Transfer to a plate.

Heat remaining oil in skillet. Add eggplant, zucchini, and red pepper. Cook 5 minutes, stirring occasionally. Add mushrooms, garlic, tomato puree, basil, and sugar substitute. Mix well; bring to a boil. Cover, reduce heat to low and simmer 5 minutes. Season to taste with salt and pepper.

Return turkey and accumulated juices to skillet. Cook, uncovered 2 to 3 minutes, just until turkey is heated through.

Comments: Look for Japanese or small Italian eggplants which don't need to be salted before cooking.

Course I don't mind - it'll be great to see what other people are cooking up. I can't get my tuna steaks til Thursday - thats' when they come into the store and they all get bought up by the weekend. I've never tried tuna steaks - eat loads of canned tuna. I'm looking forward to trying it, and seeing hat else we can cook up together.

I did this once and once I got past the first two days (which were not fun for me) I really valued the experience. I think it has been 5 months since I have done it and I am still getting the benefits from it.

Will you post photos of your lake walk for us? I'm going to dance the night away at a friends daughter's bat mitzvah for the actual anniversary but to celebrate i might go camping with my surgery partner and our families! I've never been camping as a normal person I'm wondering if it'll be better or will i hate it just as much as I did before? ANDI

Pookie it's never too late, there's no such thing! You'll be fine and you'll do great. After your work outs have a protein drink so that will help your muscles heal. I'll be joining a gym after payday. ANDI

welcome back Holly! Did you get my cards and goodies and stuff? I was praying hard for you. I am trying desperately to get my tummy tuck and what not covered by surgery or else I'll start saving up now, I'm getting something nasty taken off this body eventually so I can feel good about myself. ANDI

I'm sure you'll do great Kathryn. Post every day if you can so we can cheer you on.
When I did it, I found it easier to look on it as a detox rather than a diet, but that's just me. I certainly showed me that I could say no when I wanted to put something in my mouth that I know I shouldn't.
