What are you eating tonight?
Hi Ruth!
You poor dear ... I can't imagine eating chicken all the time! You must be so sick of it! Have you tried Carla's Bacon Wrapped Chicken recipe? It's awesome!
Tonight I'm making Pork Chops Au Gratin. I eat a pork chop and then some of the potatoes and green beans, if I still have room. The kids actually love this one too!
***********
Pork Chops Au Gratin
* 1 package Au Gratin potatoes
* 1 can Cream of Mushroom soup (undiluted)
* 1 1/2 cups milk
* frozen French-style green beans
* boneless porkchops
Place dried potatoes in a greased baking dish. In a small bowl, combine the mushroom soup, milk, and contents of au gratin sauce mix. Mix in green beans. Pour mixture over the top of the dried potatoes. Top with porkchops. Turn porkchops to coat with mixture and nestle them down into the sauce.
Cover and bake at 350-degrees for 50 minutes. Uncover and bake 20-25 minutes longer, until porkchops are cooked through (juices run clear).

Wednesdays I put the carcass in a pot of water and simmer it all day, about 8 hours and then run it through the colander and pick out all the bones and skin out and then return it back to the pot, add in a package of white pepper gravy and some veggies and oh baby, it is YUMMY.
