Since we all dont cook some major breakthrough meal each day I am seeing if I can get a tread for recipes that we want to post during the week .. so here it is.. I made Mozzarella Chicken 1/2 cup bread crubs.. I used italian Chicken breast.. how many u need..boneless and skinless 1/2 cup skim milk 1 jar of Traditional Ragu...You can make your own sauce but I used ragu and put a few seasonings in it. garlic.. i like lots. shredded mozarella cheese about 4 oz. (optional) olives, mushrooms, chives. Dredge chicken through milk and than breading and put in hot skillet (use pam to reduce calories or EVOO). Brown on both sides coat baking pan with cooking spray first. pour 1/3 of ragu in baking dish. Place chicken in pan Pour 1/2 of the ragu over the chicken. Sprinkle with seasoning taste (basil, garlic, pepper, salt). top with cheese.. pour remaining ragu over cheese.. i like the cheese on top so I didnt do that.. I also put slice olives, chives and mushrooms on mine to give it that look.. man is this yummy... I served over pasta (fetachini) for the family and I ate mine with out it.... yummy yummy yummy.. Bake for 30 minutes or until done. Enjoy

ooo...I've been looking for new ways to cook chicken. This looks yummy - I'm certainly going to try it. I think I'll do mine without the breadcrumbs though and like you will keep the cheese on the top rather than with ragu. Actually I love anything with cheese on!!! Hey hubbie...guess what we're having tonight

I do something very similar but I put the whole jar of ragu in the baking pan, then i submerge the chicken in it so it's cooking in liquid (makes it softer) for about 30 minutes then i put the cheese on top and brown it....for the family i serve this over pasta for myself i eat it as is! Hugs, ANDI

Does anyone remember Weigh****chers??? I remember they had a recipe for oatmeal pancakes that was delicious. I thought that it would have a good amount of protein in it as well. It went something like this: 1/2 cup quick oats (or a packet of instant oatmeal, any flavor) 2-3 egg whites ??? 1 packet of splenda??? Mix all together and spread out in a pan and cook. I figured that it would have about 19 grams of protein if you used two egg whites and the oatmeal. If anyone remembers that recipe let me know because I am not sure if I have it correct. I know it sounds funky but it really tastes good! Amy

there are several recipes out there... Simple recipe.. 1/2 cup cottage cheese 2 tb flour 1 egg. Mix together... make pancakes. Another one... 1 heaping tb of oats and cottage cheese each 1 egg 1/4 t of vanilla 1 pk of splenda. Mix well make your pancakes. Try the mock french toast.. it's good.. 1/2 cup of crushed pork rinds 2 eggs 1-2 tb cream.. i use milk 1-2 pak of splend Cinnamon to taste Mix together and let stand for a few minutes till it thickens. make like pancakes. Fluffy cottage cheese pancakes 1 cup oatmeal, ground 1/2 baking soda 1/4 salt 3 T. of splenda 4 eggs 1 cup of cottage cheese 1/536 cup of milk 1 t vanilla. mix together and let stand 20 minutes to thicken. make pancakes. hope that helps.. got lots of recipes of all different things to eat..lol..
