We are having stuff pork tenderloin
Take tenderloin and slice on on side almost through.. Turn and do the same to the other side. carful to stagger cuts so you dont cut it in half. Open the tenderloin, cover with plastic wrap and pound flat.
Take spinach, garlic, breadcrumbs and you choice of cheese.. I use blue cheese or mozzarella. Mix together in a bowl. spread onto tenderloin. Roll tenderloin holding all that yummy stuff inside it.
In a large hot skillet. Sear meat to give it a nice golden brown color and hold juices in. Use a small amount of EVOO. Salt and pepper to taste.
Place in a baking pan and put in oven at 375 for approx 40 minutes or until done.
Let stand for 10 minutes. Cut meat like a loaf exposing all the stuffed goodness. This is so good.
I serve it with extra spinach and a pasta with bread stick.. the family loves it..
