We had meat balls - Deanna's recipe adapted a little. Very yummy
Mix ground beef with seasoning (I use Italien) together with lots of grated cheese and an egg. I guess on the amounts until it looks right!
Form into balls (golf ball size) and bake in the over for about 20-30 minutes til they are just crispy. Then place them in a dish and pour ragu/tomato sauce over and put back in the oven til sauce bubbling.
I used to make these when I lived in Texas and used Jimmy Deans Italien sausage. That was even nicer flavour.
We had london broil, first corn of the season from somewhere (YUM), roasted brussel sprouts, carrots and dip for the sprout haters amongst us.....this evening we'll have ribs, mac & cheese, sweet potatoes, regular potatoes and probably broccoli because i love it.
I have been craving roasted veggies for some odd reason. If i eat that i tend to be gassy and guilty so i try to melt some cheese over it for protein, but now i'm thinking i'm lactose intolerant too so the gas is potent and painful after dinner!
