What you cooking today
I made mexican scramble for breakfast
8 eggs
1 pound of chorizo
1 10 oz can of green chili
Salt and pepper to taste
1 cup of cheddar cheese
Salsa
sour cream and gucamole to taste (optional)
cook chorizo in large skillet.. when it is cooked pour eggs and season to taste. Make like a large omellet. Once side one is done flip in sections and place green chillis and cheese on. cover it to let the cheese melt. Serve with salsa, sour cream and gucamole to taste. yummy.
For dinner..
Chicken breast. Place in a pan. pour ragu on each one and place mozzarella slice on top of each one. back in oven ate 375 for 40 minutes. place in broiler for 5 minutes to brown the cheese and serve. Low carb recipe.. I add additional spices and I use my own meat spaggetti sauce. you can do the same if you still have some left over from last night.
Optional with more cals.. place chicken in milk and run through bread crumbs.. place in skillet with olive oil to brown. than do what I said in the pan. makes the chicken cruncher and more like the real stuff.. i do that for the family. I make mine the other way.. have fun.
we had pasta night after the kids got home from track...what a day what a day! We had a flat tire after a whole day spent at the track, with my husband screaming at me (good night nurse, what did you run over now Andrea? uhhhhh you've caught me, i scatter nails on the ground and try my luck) we gimped to a service station to fix it.
