Well I made spagetti yesterday for today cause it takes bout 12 hours to cook it the way I like.. I also made chicken enchiladas yesterday for dinner so I will post that recipe today. Chicken Enchiladas Corn torillas 1/2 tsp chilli powder garlic powder (to taste) 1 cup of corn (more if you like it) 1 10 oz can of black beans ( I dont like them and dont put it in) 1 pound of chicken breast (about 3) diced up well Enchilada sauce 1 10oz can of green chili's I can of slice olives (more if you like them) 2 cups of 3 blend cheese Cook chicken in olive oil with seasoning and corn and green chili's. Make sure chicken is diced up good. Let it cook for a while to let the chicken get tender. You can boil the chicken if you like as well and add seasoning and other stuff after. your choice. Layer a thin layer of corn torillas in a 9 by 11 pan. Layer a row of black beans first (optional.. I dont do this) layer a row of chicken with corn mixture in pan. Put a layer of cheese over chicken. pour about a cup of enchilada sauce over that cheese. Repeat this for the second layer. Lay a row of corn torilla's over the top and pour the remaining sauce on it. Bake at 400 degrees for about 30 minutes. Add cheese to the top of the enchiladas and put back in for a nother 10 minutes til cheese melts. Let stand for 5 minutes. I just pick the torilla shells out of mine and eat.. very good.. yummy.. enjoy.

spagetti 2l bs of lean ground meat 2 lbs ground itallian sausage 1 pack of sliced mushrooms 2 large chopped white onions 2 cloves of minced garlic 2 tbs of itallian seasoning 2 tbs of oregano 2 large cans of diced tomatos 1 large can of tomato sauce 2 cups of chanti red wine brown meats, spices and onions in large frying pan after meatis cooked combine all mixing into large pot and simmer for 3 hrs serve over pasta or on garlic buttered bagguets.

this sounds good, i'd probably use a roasted chicken from the deli as chicken breasts are too dry for me, or boneless,skinless chicken thighs.....my choice depending on how busy i am! I'm busy as a pied piper today but that is beside the fact. aNDi
