I need to go the the store today to get groceries so I am at a loss of what exactly I will cook but I know it will be chicken..lol.. I will post a recipe in a bit when I decide what I will be making.. hmmm.. I am making spag. for tommorrow at grandmas.. that takes me all day. Spagetti 1 pound ground beef 1 package of hot italian sausages. 1 pound of steak cut in small pieces 4 cans of diced italian style tomatos 2 cans of stewed tomatos 1 large can of tomato sauce 3 gloves of garlic bunch of italian seasonings.. you preference.. can of sliced olives Mushrooms (cut bunch to taste) I also dice up a few tomatos in there myself. (if you want to make it easier.. instead of stewed tomatos and tomato sauce use on jar of ragu).. does cut the time a bit. Brown meat. Combine all other ingredents. put meat in and simmer for 4-6 hours. My family doesnt like meatballs so I dont make them.. you can add meatballs if you like. I wish i could.. serve with you choice of noodles, spaggetti squash. etc..

Cornish Hens with Apricot-Wine Sauce 2 Tablespoons butter 2 small cornish hens, cut in quarters 2/3 cup reduced sodium chicken broth 1/2 cup dry white wine 1/4 cup sugar free apicot jam 2 Tablespoons fresh lime juice 2 teaspoons grated lime zest salt and pepper to taste 1. heat the butter in a large heavy saute pan over medium heat until the foam subsides. Add the hens and cook, turning once for 5 minutes per side. 2. Add the chicken broth, wine, jam, lime juice, lime zest, salt and pepper to the casserole and bring to a boil. Partially cover the pan, reduce the heat to low and cook for 15 minutes, or until the hens are cooked through. Serve Immediately. * I serve this with a blend of white and wild rice and some steamed broccoli but couscous will work well or any grain you'd like
