We are having Chicken Fajitas for dinner.
Chicken Fajitas
Cut chicken breast or thighs (your preference) into stripes.
Season with taco seasoning, small pinch of red pepper flakes, cummin and sala (use small almount (only there to flavor and help pull glaze from pan and keep meat searing. Brown up in a pan. allow sala to cook away. Add green and red bell peppers (thin long slices), chopped or sliced onions. garlic. Allow veggies to carmelize in pan as meat is browning. Keep mixing it together til done and serve immediately (best when hot) Can add tapito or tabsico to taste if you like your fajitas hot and spicy.
Serve with flour torillas, beans and rice. Optional condiments are sour cream, salsa, and gucamole. Yummy.
Family had left over fahita chicken with morrocan cous cous and I treated myself and had fresh bread with pate. I hardly ever eat bread now, I can probably count on one hand how many times I've had it since WLS, but I love it and I really enjoyed my meal. Couldn't eat much though, which is probably a good thing
