I am making Pasta Fagioli. Yummy italian soup with ground beef, celery, onions, peppers, garlic, kidney beans, tomatoes, beef stock and small shell pasta. Lots of fresh oregano, parsley and basil. I cook the pasta seperate and add just a little to a bowl of the soup before eating. Here is how I make it: 1 lb ground sirloin 1 c. diced celery 1 c. diced onion 1/2 c. diced green peppers 2 tbls minced garlic 1 28 oz can diced tomatoes 1 15 oz can red kidney beans 1 32oz container beef stock, I also add 1 tbls beef soup base to this 2 tbls fresh organo 2 tbls fresh parsley 1 tbls fresh basil salt and pepper to taste Brown and crumble beef in skillet. I add some garlic powder and salt and pepper to this. Drain. Combine remaining ingredients in large crock pot. Add beef and let simmer all day. Just before serving prepare small shell pasta...the tiny one. I usually add some of this to the bowl then ladle soup into bowl. 145 cals per cup 20 carbs 12 g protein
