So whats for dinner.. share. I am making Carnnitas burritos tonight.. Pork Roast place in crock pot with one cup of salsa, garlic, salt and pepper and green chiles. Cut in smaller pieces to help it cook faster. Cook all day until it pulls apart. Served on low carb torillas ( i will have mine with out this). beans and spanish rice. Cover with red sauce (rancherito stlye). sour cream, salsa and gucamole... yummy.. desert.. fudge swirl ice cream on a torilla fried crispy and covered with cinnamon/sugar mixture. Dripping chocolate over scoop of ice cream and crisp for took. Of course I cant have that but the family loves it.. total meal prep time bout 30 minutes til food can be served. Enjoy

We are having summer chicken 6 chicken breast or 1 for each person 1 cup of orange juice 2 tbs lime juice 1 clove of chopped garlic 2 tsp of montreal chicken seasoning put everything in large plastic baggie and let chicken soak for at least an hour ( i do mine the night before ) cook on grill for 20 mins super duper yummo !

yummy.. that sounds good.. I make somehting similar but use pollo seasoning.. Will need to try the montreal seasoning now..

Oh Carla, that sounds heavenly! We have a little taco joint here that makes carnitas burritos and I like to get them and eat the insides out of them. Yum! Now I will try your recipe and see if it's the same ... it sounds really similar! Yummo!!! Deanna

I'm making Crustless Quiche and serving it with strawberries and blueberry muffins. I won't eat the muffins but the family will. I've made this recipe before and it's sooooo yummy! I'm going to decrease the margarine tonight because I want to lower the fat content and plus, I don't think it will need it. We'll see how it turns out! CRUSTLESS CHEESE QUICHE INGREDIENTS: * 3 eggs * 1 1/2 cups milk * 1/2 cup biscuit/baking mix * 1/2 cup butter or margarine, melted (I'm going to decrease this to 1/4 cup and see how it turns out) * 1/8 teaspoon pepper, and 1/8 teaspoon salt * 6 bacon strips, cooked and crumbled (I use 8 strips) * 1 cup shredded Cheddar cheese DIRECTIONS In a mixing bowl, combine the first five ingredients. Beat on low speed for 3 minutes or until blended. Transfer to a greased 9-in. pie plate. Sprinkle with bacon and cheese; lightly press down into batter. Bake, uncovered, at 350 degrees F for 45 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before serving.

I've made that and it is yummy... yeah.. my carnitas is your basic mexican family home cooking thing.. I have relatives and of course my children of hispanic decent so I need to get it as close to the good stuff as I can.. people would never quess how much mexican food uses garlic.. it's like the main ingredient for most of their meals..
