Alright guys.. lets do some receipes for each other.. I know we always want it when we see something good posted so here is you're chance..
What are u making tonight.. include receipe..
Eggplant Lasagna
1 large eggplant (can substitute zucchini or cabbage leaves)
1 package shredded mozzarella
1 15 oz ricotta
1 egg
1 lb mild Italian sausage (change or omit to preference) I am using chicken and adding frozen mixed veggies to the mix.
1 package shredded parmesan cheese
1 bottle favorite sauce (ie: prego cheese and garlic)
Wash and dry eggplant, slice lengthwise into thin oblong strips. Saute in oil and set aside.
Combine ricotta, egg, and ½ of parmesan in bowl.
Brown sausage and combine with sauce.
Layer in pan: eggplant in bottom, meat/sauce, ricotta mixture, mozzarella, repeat twice.
Sprinkle remaining mozzarella and parmesan on top.
Bake 350 degrees until warm in center (approximately 25 minutes).
That sounds really interesting! I haven't had eggplant since I was little,my grandma used to make fried eggplant. Forgot what it tastes like...Will have to try eggplant again!

I haven't decided on what to make yet tonight and I am at work,so no recipes! Plus I think my hubby is home and he said something about making a meatloaf! He loves to cook and is good at it!
I am cooking salmon and the kiddos are having pizza !
2 salmon steaks
1 white onion sliced
2 green or yellow squash cut into slices
6 mushrooms sliced
mrs dash garlic &herb seasoning
3 squirts on each steak of "FAKE" butter spray
spray fish with fake butter spray
sprinkle mrs dash on both sides of the fish
lay in foil packet or non stick pan
cover the top of the fish with veggies
seal packet or pan with foil
bake in oven @350 for 30 min or on bbq for 20
fish is done when it flakes easily with a fork.

I'm making pork chops with "milk gravy" like my Mom used to always make.
I just fry up the pork chops in a pan and when they are finished cooking, I set them aside to rest. Then I add a little oil to the drippings in the skillet and work the drippings up. Then I sprinkle a little flour in the oil and cook it for a couple minutes to get the "flour" taste cooked out. Then I start adding milk and stirring constantly so keep the lumps out. Keep adding milk because it gets really thick. Once it gets to a gravy consistency, I add a little salt and pepper and it's done. YUMMY!
Probably not too healthy with the gravy but it's got a ton of milk in it ... protein, right? Hee, hee! I don't eat a lot of it, just a little to drizzle on my pork chop.

My grandma made that for me too and I love it.. you would think coming from a family that came from the south I could make gravy. I think there is an art to gravy making and I dont have it. I use the wondra gravy stuff and can sometimes get it to come out right. lol... I think because as a kid i hated gravy I just never got good at it.. now that i like gravy my grandma isnt around to show me how she did it.. it always taste like flour to me.. lol...
